Following a stay on the Caribbean beaches,
a visit to Merida, capital of Yucatan, is indispensable for excellent
reasons: in this "white city" the colonial past is reflected
inthe Franciscan austerity of its monasteries, in regional cooking
in which bitter lemon, lime and orange brought over from Spain are
fused with Mayan seasonings and condiments to produce such dishes
as cochinita (pork) pibil or lime soup. Another excellent reason
to visit Mérida is to play at LA CEIBA GOLF CLUB or the YUCATAN
GOLF CLUB where the elite of Yucatán society gather in the
"land of the pheasant and the deer". Here, where the breezes
of Mayab blow, the aristocratic families are excellent golfers.
We also recommend fishing in the port of Progreso, a delightful
experience.
